- Traditional Japanese fish slicer. I like the contrast between the two steel layers.
- Got this pile of knives serviced for a sushi shop in Launnie. They were a bit rusted but that was easily fixed. I noticed a Masamoto within the pile; if I'm not mistaken, these things start at $800 and can go all the way to $2000. Very nice to use though.
- This I.O. Shen sashimi knife is the first single bevel knife we sharpened for a customer. The western handle definitely looks a bit weird on a single bevel knife, and it makes sharpening harder as well. You can probably get better knives for the money.
